1 29-ounce can pumpkin
3 eggs
2/3 cup vegetable oil
1 cup granulated sugar
2 teaspoons baking soda
1 teaspoon baking powder
2 teaspoons ground cloves
2 teaspoons cinnamon
2 teaspoons nutmeg
1 teaspoon allspice
1 teaspoon salt
1/2 cup flour
2 cups oatmeal

How to Make Pumpkin Oatmeal Muffins Directions

Preheat oven to 350° F.
Place paper liners into muffin tin.
In a large bowl combine pumpkin, eggs, and vegetable oil.
Mix all dry ingredients together in a large bowl.
Slowly mix dry ingredients into the pumpkin mixture.
Mix flour and oatmeal into the batter.
Add a little more oatmeal, if the batter appears too thin.
Pour batter into liners in the muffin tin.
Bake for 20-25 minutes.
Test muffins with a toothpick for doneness.
Bake a little longer, if needed.
