  • 1 29-ounce can pumpkin
  • 3 eggs
  • 2/3 cup vegetable oil
  • 1 cup granulated sugar
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons ground cloves
  • 2 teaspoons cinnamon
  • 2 teaspoons nutmeg
  • 1 teaspoon allspice
  • 1 teaspoon salt
  • 1/2 cup flour
  • 2 cups oatmeal

Directions How to Make Pumpkin Oatmeal Muffins

  1. Preheat the oven to 350° F. While the oven is heating up, prepare the batter for the muffins.
  2. Place paper liners into the muffin tin.
  3. Then, in a large bowl, combine the pumpkin puree, eggs, and vegetable oil.
  4. Mix all of the dry ingredients together in a large bowl.
  5. Slowly mix the dry ingredients into the pumpkin mixture.
  6. Mix flour and oatmeal into the batter.
  7. Add a little more oatmeal if the batter appears too thin.
  8. Pour the batter into liners in the muffin tin.
  9. Bake the muffins in the oven for 20-25 minutes.
  10. Test the muffins with a toothpick for doneness. If the toothpick comes out clean, then the pumpkin oatmeal muffins are done baking.
  11. Bake a little longer, if needed.
