Pumpkin Whoopie Pie Recipe

Description: Whoopie pies were first created in Pennsylvania Dutch Amish Country. Some people believe there is only one chocolate whoopie pie recipe. However, if you visit Amish country during their Fall Whoopie Pie Festival, you will find over 100 varieties! Pumpkin Whoopie pies are one of the more popular ones.

Pumpkin Whoopie Pies Cake Ingredients:
  • 2 cups pumpkin, cooked or puree
  • 2 egg yolks
  • 2 cups brown sugar
  • 1 cup vegetable oil
  • 1 teaspoon ground cloves
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 3 cups flour

Pumpkin Whoopie Pies Filling Ingredients:

  • 2 egg whites
  • 2 teaspoons vanilla
  • 4 teaspoons flour
  • 2 Tablespoons milk
  • 1 1/2 cups vegetable shortening
  • 1 pound 10x sugar

How to Make Pumpkin Whoopie Pies:
  1. Preheat oven to 350 degrees.
  2. Mix together dry cake ingredients in a mixing bowl, and set aside.
  3. In a second mixing bowl, mix together cooked pumpkin, egg yolks and vegetable oil.
  4. Add dry ingredients, and mix until the batter is smooth.
  5. Grease a cookie sheet, or use a non-stick cookie sheet.
  6. Drop a heaping Tablespoon of cake batter onto the cookie sheet, spread the batter out to make a 3 1/2 to 4 inch cookie.
  7. Repeat process, leaving about 2 inches between cookies.
  8. Bake in oven for 8-10 minutes.
  9. While the cookie is baking, prepare the filling.
  10. Beat egg whites until stiff.
  11. Add vanilla, flour and milk. Beat well.
  12. Add shortening and sugar. The more you beat, the fluffier it gets.
  13. Remove cookies from the oven and allow to completely cool.
  14. Take one cookie and place a very generous amount of filling on top.
  15. Top with a second cookie.
  16. Repeat process for remaining cookies.
