Safely light pumpkins


Pumpkin Preserve Recipe

Description: Pumpkin Preserve is a real Fall treat. Spread it on toast, muffins, bagels and more. Make a friend.... bring someone a jar of Pumpkin Preserve.


Ingredients:
5 pounds Pumpkin
8 cups Sugar
3 Lemons, thinly sliced
1/2 teaspoon Salt
1/4 teaspoon Pumpkin Spice


Preparation Directions:
  1. Cut the lid off of a 5-6 pound pumpkin.
  2. Remove the insides.
  3. Cut the pumpkin into manageable quarters.
  4. Cut pulp into 1/2" to 1" pieces.
  5. Add sugar. Let stand in the refrigerator overnight.
  6. The next day, add lemons, salt and pumpkin spice.
  7. Bring to a boil, stirring occasionally.
  8. Cook pumpkin until it is smooth, tender, and the syrup is thick.
  9. Pack into hot jars and seal.

Tip: Make enough to give to your family and friends.
