Safely light pumpkins

Pumpkin Preserve Recipe
Description: Pumpkin Preserve is a real Fall treat. Spread it on toast,
muffins, bagels and more. Make a friend.... bring someone a jar of Pumpkin
Preserve.
Ingredients:
| 5 pounds |
Pumpkin |
| 8 cups |
Sugar |
| 3 |
Lemons, thinly sliced |
| 1/2 teaspoon |
Salt |
| 1/4 teaspoon |
Pumpkin Spice |
Preparation Directions:

Cut the lid off of a 5-6 pound pumpkin.

Remove the insides.

Cut the pumpkin into manageable quarters.

Cut pulp into 1/2" to 1" pieces.

Add sugar. Let stand in the refrigerator overnight.

The next day, add lemons, salt and pumpkin spice.

Bring to a boil, stirring occasionally.

Cook pumpkin until it is smooth, tender, and the syrup is thick.

Pack into hot jars and seal.
Tip: Make enough to give to your family and friends.
