Pumpkin Oatmeal Bread Ingredients
1 cup quick oats
1 cup dates, finely chopped
1 cup raisins, chopped
1 cup pecans, chopped
1 ½ cups hot milk
2 eggs, beaten
1tsp. vanilla
½ cup canned pumpkin
2 cups flour
¾ cups sugar
1 Tbsp., plus 1 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
¼ tsp. nutmeg
Directions How to Make Pumpkin Oatmeal Bread
First, combine oats, dates, raisins, pecans, and hot milk.
Next, stir in eggs, vanilla, and pumpkin.
Then, mix well and let stand for 10 minutes.
Preheat oven to 350° F.
In a separate bowl, combine the remaining ingredients and mix together well.
Gradually stir ingredients into the oatmeal mixture.
Spoon batter into a greased and floured 9″ X 5″ X 3″ loaf pan.
Bake in the oven for one hour and 5 minutes.
Test with a toothpick for doneness. If the toothpick comes out clean, then the bread is done baking.
Remove the loaf from the oven and allow the pumpkin oatmeal bread to cool on a wire rack.
