Pumpkin Layer Cake Recipe Description:

There’s something about layer cakes that gives the impression of a great tasting dessert. This pumpkin layer cake tastes as good as it looks.

Serve this cake at Autumn celebrations. Or, treat the family with this cake for the dessert after dinner.


1 ½ cups sugar

4 eggs, well beaten

1 cup corn oil (or vegetable oil)

1 teaspoon vanilla

2 cups pumpkin puree

2 cups flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon cinnamon

1 teaspoon allspice

Vanilla or Pumpkin Cake Frosting

Pumpkin Layer Cake Recipe Directions:

  1. Preheat oven to 325 ° F.
  2. In a large bowl, combine sugar, eggs, oil, vanilla and pumpkin. Mix together well.
  3. Add dry ingredients.
  4. Use an electric mixer and beat 1-2 minutes at medium speed until batter is smooth.
  5. Pour batter into three greased and floured 9 inch cake pans.
  6. Bake for 25-30 minutes.
  7. Test with a toothpick for doneness.
  8. Allow to cool in the pans for 10 minutes.
  9. Remove from pans onto cooling racks and allow to completely cool.
  10. Spread frosting between each layer and on the top.
