On a low-fat diet!? You’ve got nothing to worry about with this tasty, fat-free Pumpkin Bran Muffins recipe. These muffins have zero fat and zero cholesterol. They are muffins you can feel good about. If you eat them plain, you’re all set. However, if you add butter or another spread, make sure they are also fat-free.
Eat one, or two muffins, sans guilt.
Yield: 12 muffins

In a bowl, mix together pumpkin, cereal, milk, corn syrup and egg white.
In a second bowl, mix together dry ingredients.
Slowly pour and mix dry ingredients into the pumpkin mixture.
Pour batter into muffin cups.
Bake in the oven for 20 minutes.
Test muffins with a toothpick for doneness. Cook a little longer, if need be.
Remove from oven and place on a wire cooling rack.
