Pumpkin Bran Muffins Recipe Description:

On a low fat diet!? You’ve got nothing to worry about with this tasty, fat-free Pumpkin Bran Muffins recipe. These muffins have zero fat and zero cholesterol.

Eat one, or two muffins, sans guilt.

Yield: 12 muffins

Ingredients:

  • 1 cup pumpkin puree, or canned pumpkin
  • 1 cup high fiber bran  cereal shreds/crumbs
  • 3/4 cup skim milk
  • 1/3 cup corn syrup
  • 2 egg whites, slightly beaten
  • 1 1/4 cups flour
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • /12 teaspoon salt
  • 1/2 cups raisins

Pumpkin Bran Muffins Recipe Directions:

  1. Preheat oven to 400 ° F.
  2. Place muffin cups into muffin tray.
  3. In a bowl, mix together pumpkin, cereal, milk, corn syrup and egg white.
  4. In a second bowl, mix together dry ingredients.
  5. Slowly pour and mix dry ingredients into pumpkin mixture.
  6. Pour batter into muffin cups.
  7. Bake in oven for 20 minutes.
  8. Test muffins with a toothpick for doneness. Cook a little longer, if need be.
  9. Remove from oven and place on a wire cooling rack.
