Pumpkin Oatmeal Bread Recipe Description:

Pumpkins are good for your health. Oatmeal is, too. So, you can feel good about eating this Pumpkin Oatmeal Bread.


  • 1 cup quick oats

  • 1 cup dates, finely chopped

  • 1 cup raisins, chopped

  • 1 cup pecans, chopped

  • 1 ½ cups hot milk

  • 2 eggs, beaten

  • 1tsp. vanilla

  • ½ cup canned pumpkin

  • 2 cups flour

  • ¾ cups sugar

  • 1 Tbsp., plus 1 tsp. baking powder

  • 1 tsp. salt

  • 1 tsp. cinnamon

  • ¼ tsp. nutmeg

Pumpkin Oatmeal Bread Directions:

  1. Combine oats, dates, raisins, pecans and hot milk.
  2. Stir in eggs, vanilla, and pumpkin.
  3. Mix well and let stand for 10 minutes.
  4. Preheat oven to 350 ° F.
  5. In a separate bowl, combine remaining ingredients and mix together well.
  6. Gradually stir ingredients into the oatmeal mixture.
  7. Spoon batter into a greased and floured 9″ X 5″ X 3″ loaf pan.
  8. Bake in oven of one hour and 5 minutes.
  9. Test with toothpick for doneness.
  10. Remove from oven and cool on a wire rack.
