Pumpkin Oatmeal Muffins Recipe Description:

Healthy pumpkin oatmeal muffins are certain to become a regular treat during Autumn, Thanksgiving, and even early winter baking.

Try these muffins with a pumpkin latte. You’ll be in for a double treat!

Ingredients:

  • 1 29oz. can pumpkin
  • 3 eggs
  • 2/3 cup vegetable oil
  • 1 cup granulated sugar
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons ground cloves
  • 2 teaspoons cinnamon
  • 2 teaspoons nutmeg
  • 1 teaspoon allspice
  • 1 teaspoon salt
  • 1/2 cup flour
  • 2 cups oatmeal

Pumpkin Oatmeal Muffins Directions:

  1. Pre-heat oven to 350 ° F.
  2. Place paper liners into muffin tin.
  3. In a large bowl combine pumpkin, eggs and vegetable oil.
  4. Mix all dry ingredients together in a large bowl.
  5. Slowly mix dry ingredients into the pumpkin mixture.
  6. Mix flour and oatmeal into the batter.
  7. Add a little more oatmeal, if the batter appears too thin.
  8. Pour batter into liners in the muffin tin.
  9. Bake for 20-25 minutes.
  10. Test muffins with a toothpick for doneness.
  11. Bake a little longer, if needed.
