This old fashioned pumpkin cake recipe goes back to at least the early 1950’s. It’s still around, simply because it tastes, ohhh so good.

Ingredients:
1/2 cup shortening
1 cup brown sugar
1/2 cup granulated sugar
2 cups all purpose flour, sifted
1 teaspoon vanilla
1 egg
1 cup pumpkin cooked or canned, sieved or thoroughly mashed
1/2 cup milk
1/4 teaspoon salt
4 teaspons baking powder
1/2 cup chopped walnuts
Pumpkin Cake Recipe Directions:
Pre-heat oven to 350 ° F.
Cream shortening with sugars.
Add egg, vanilla flavoring, pumpkin, salt and baking powder, mixing well.
Add half the flour and milk, mixing well.
Add remaining flour and milk, again mix well.
Fold in chopped walnuts.
Bake in oven for about 1 hour..
About 10 minutes before it is done, begin to test for doneness with a toothpick.
Optional Topping: Use a butter or cream cheese topping. Add a few drops of orange food coloring and mix together. Sprinkle a few walnuts on top of frosting.
