Pumpkin Cupcake Ingredients
1/2 cup
Shortening
2
Eggs
1 1/2 cups
Sugar
2 1/2 tsp.
Baking Powder
1.2 tsp.
Baking Soda
1/2 tsp.
Salt
2 1/4 cups
All Purpose Flour
2tsp.
Cinnamon
1/2 tsp.
Nutmeg
1/2 tsp.
Ginger
1 cup
Pumpkin Puree
3/4 cups
Milk
1/2 cups
Walnuts
1 can
Vanilla Frosting
Orange Food Coloring(1 drop red and 5 drops yellow)
Directions How to Make Pumpkin Cupcakes
First, preheat the oven to 350° F. While the oven is heating up, prepare the cupcake batter.
Next, in a large bowl, cream shortening and sugar.
Add in eggs.
Add in pumpkin puree and milk.
In a bowl, sift together flour, baking powder, baking soda, and spices.
Mix dry ingredients into the mixture until the batter is smooth.
Stir in chopped walnuts.
Put paper cups into cupcake tins.
Put batter into cupcake tins.
Bake the cupcakes in the oven for 25 minutes.
Use a toothpick to test for doneness.
Allow cupcakes to cool.
While cupcakes are cooling off, add orange food coloring to vanilla frosting, mixing well.
Finally, frost cupcakes with orange frosting.
Decorating Tip: Use Halloween sprinkles, too!
