Once you make and serve them for the first time, you’re destined to make them again and again. Undoubtedly, people will ask you for the recipe.

Pumpkin Gingerbread Bars Ingredients

2Eggs
1/2 cupBrown Sugar
3/4 cupPumpkin, canned
2 Tbs.Molasses
1 tsp.Vanilla Extract
3/4 cupAll-Purpose Flour
1 tsp.Baking Powder
1 tsp.Ground Cinnamon
1 tsp.Ground Ginger
1 Tbs.Confectioner’s Sugar

Directions How to Make Pumpkin Gingerbread Bars

  1. First, preheat the oven to 375° F. While the oven is heating up, prepare the batter.
  2. Next, spray a 9-inch square baking pan with non-stick cooking oil spray.
  3. Then, beat the eggs with a mixer on high for 2 minutes.
  4. Reduce speed to medium and add brown sugar.
  5. Add pumpkin molasses and vanilla. Beat for two minutes at medium speed.
  6. Add all remaining ingredients, and mix in well.
  7. Pour batter into baking pan.
  8. Bake in the oven for 20 minutes.
  9. Use a toothpick to test for doneness.
  10. Remove from oven and allow to cool for 10-15 minutes.
  11. Sprinkle confectioner’s sugar over the top.
  12. Cut into squares.
  13. Serve the pumpkin gingerbread bars warm or cold.

Serving Suggestion: When serving warm, add a dollop of whipped cream.

Excess moisture is the main reason berries of all kinds go bad quickly. Therefore, at the grocery store, always check for freshness.  Flip over the container the berries are in. If they don’t stick to the bottom of the container, they are fresh and will last longer.
