Pumpkin Streusel Muffins Description

Ingredients:

1/2 cupPumpkin Puree
1/2 cupMilk
1/3 cupVegetable oil
1Egg, beaten
1 3/4 cupsAll Purpose Flour
1/2 cupSugar
3 tsp.Baking Soda
1 tsp.Cinnamon
1/2 tsp.Nutmeg
1/2 tsp.Salt
3 oz.Creamed Cheese
  
Topping: 
1/4 cupBrown Sugar
1/2 tsp.Cinnamon
1/ Tbsp.Butter or Margarine
1/3 cupChopped Walnuts

Pumpkin Streusel Muffins Recipe Directions:

  1. Pre-heat oven to 400° F.
  2. In a bowl, combine egg, milk, pumpkin and oil, mixing well.
  3. Blend in flour, baking powder, sugar, and spices.
  4. Mix until batter is still a little lumpy.
  5. Put paper muffin cups into a 12 cup muffin pan.
  6. Pour batter into muffin cups, 1/2 full.
  7. Cut cream cheese into 12 pieces and place on top of muffins.
  8. Add remaining batter into the muffin cups to about 3/4 full.
  9. Combine streusel topping ingredients, mixing well.
  10. Sprinkle topping over muffins.
  11. Bake for 18-22 min., until golden brown.
  12. Serve warm.
