Wake up to your favorite fruit for breakfast- – Pumpkin! This recipe adds a little banana, for a flavor that blends well with pumpkin flavor. Try this pumpkin banana pancakes recipe for your family, and they will be asking for more.
Tip: You can have these pancakes for dinner, too.
Makes: 12-16 pancakes
Ingredients:
1cup
All Purpose Flour
1/2 cup
Pumpkin puree fresh cooked or canned
1 Tbs.
Sugar
1 cup
2% Milk
2
Eggs, separated
2 Tsp.
Baking Soda
1/4 Tsp.
Salt (use less if on a low sodium diet)
1/2 Tsp.
Ground Cinnamon
2 Tbs.
Vegetable Oil
1-2
Bananas
Pumpkin Banana Pancakes Directions:
Combine dry ingredients and spices in a bowl.
In a second bowl, whisk together, pumpkin puree, egg yolks, milk, and vegetable oil.
Stir wet ingredient into dry ingredients.
Use a mixer to beat egg whites until peaks form. Then, fold them into the batter.
Slice banana wheels from bananas just before cooking.
Pour 1-2 tablespoons of batter onto a greased griddle.
Place 3-5 banana wheels onto the pancake. Flip pancake when browned, and cook bottom side.
Serve with syrup.
Tip: For a quicker meal, use pancake mix(boxed), versus a homemade recipe. But, don’t forget to add the bananas!
