Ingredients:
5-6 pounds pumpkin
8 cups sugar
3 lemons, thinly sliced
1/2 teaspoon salt
2/4 teaspoon pumpkin spice
Pumpkin Preserve Recipe Directions:
Cut the lid off of a 5-6 pound pumpkin.
Remove the insides.
Cut the pumpkin into manageable quarters.
Cut pulp into 1/2″ to 1″ pieces.
Add sugar. Let stand in the refrigerator overnight.
The next day, add lemons, salt and pumpkin spice.
Bring to a boil, stirring occasionally.
Cook pumpkin until it is smooth, tender, and the syrup is thick.
Pack into hot jars and seal.
Tip: Make enough to give to your family and friends.
