These patties are about the size of a small pancake. You might consider their name a misnomer. These patties are sometimes called Australian potato pumpkin pancakes.

Potato Pumpkin Cakes Ingredients
1 potato-sized piece of peeled pumpkin
1 large potato
1 egg
1 small onion
1 tablespoon oil
1 clove crushed garlic
1 tablespoon light soy sauce
pinch pepper
1 tablespoon chopped parsley
DIrections How to Make Potato Pumpkin Cakes
First, peel potato and grate. Place the grated potatoes in a colander, rinse in cold water, and squeeze out liquid by pressing them with a wooden spoon.
Next, grate the pumpkin.
Grate peeled onion.
Next, mix all vegetables with garlic, soy sauce, pepper, and parsley.
Then, shape into patties.
Heat oil in a frying pan and cook patties for about 2 minutes or until set and golden.
Turn and brown the other side.
Reduce heat and cook for 3-4 minutes, turning them once more.
Serve hot as a vegetable or as a light lunch with salad.
