Pumpkin Tomato Basil Soup Description

This is a great Fall recipe. If you love pumpkins and you love tomatoes, you will love this pumpkin tomato basil soup recipe. The flavors blend well together.


1Small Pumpkin
7Tomatoes, skinned and chopped
4 cupsChicken Broth
8-10Carrots, peeled and sliced or diced
1Medium Onion
2-3 clovesGarlic, chopped
1 cupMushrooms, sliced
2 TablespoonsBasil, chopped
1/2 stickButter or Margarine
1 TeaspoonSalt
pinchGround Pepper
1/4 cupCream

Pumpkin Tomato Basil Soup Recipe Directions:

  1. In a large pot, put Chicken Stock, pumpkin and carrot.
  2. Bring to a boil, then reduce to simmer for 1/2 hour.
  3. Put butter or margarine in a frying pan and sauté onions and mushrooms until browned.
  4. Add tomatoes and continue to fry for 5 minutes.
  5. Puree all ingredients in a blender. Place pureed soup into the soup pot.
  6. Add spices, sugar and cream at this time.
  7. Simmer for 10 minutes.
  8. Serve with fresh home made croutons.
