People enjoy pumpkins in many ways all over the world. Now, here is a recipe with an international flair. This Saskatchewan mashed pumpkin recipe comes to us, compliments of the folks up north in Canada. While people in America most often use pumpkins for baked goods, people in many other countries around the world use them as a vegetable side dish.
Add this as a side dish to your Autumn meals. It is quick, easy. Yet, it is tasty enough to tasty to serve with a main course.

Pumpkin Trivia: A pumpkin is a fruit. Most people think of it as a vegetable. But, now that you know it is a fruit, no one will complain if you refer to it as a vegetable. They are 90% water.
Mashed Pumpkin Ingredients
3-4 cups
Pumpkin, cooked, mashed
1
Onion
2 tbs.
Olive Oil
1
Bell Pepper
Salt to taste
Pepper to taste
Directions How to Make Mashed Pumpkin
To cook a pumpkin, first clean out one pumpkin and peel it.
Cook it until soft.
Next, mash it with a mixer.
Then, reheat it in a large saucepan.
Thinly slice an onion.
Fry the onion in olive oil till brown.
Add browned onions to the pumpkins. Mix in.
Then, add coarse salt and fresh ground pepper to taste.
