Saskatchewan Mashed Pumpkin Recipe Description

People enjoy pumpkins in many ways all over the world. This Saskatchewan mashed pumpkin recipe comes to us, compliments of the folks up north.

Add this to your Autumn meals. It is quick, easy, and tasty for serving with a main course.

Ingredients:

3-4 cupsPumpkin, cooked, mashed
1Onion
2 tbs.Olive Oil
1Bell Pepper
 Salt to taste
 Pepper to taste

Mashed Pumpkin Recipe Directions:

  1. To cook pumpkin, clean one pumpkin and peel it. Cook until soft. 
  2. Mash it with a mixer.
  3. Re-heat  in a large saucepan.
  4. Thinly slice an onion.
  5. Fry the onion in olive oil till brown.
  6. Add browned onions to pumpkins. Mix in.
  7. Add coarse salt and fresh ground pepper to taste.
