It’s an international recipe that comes from the United Kingdom, compliments of Hilary Jupp. The ingredients for this pumpkin pudding include apricot jam and grapes for a great blend of flavors.
Pumpkin Trivia: Pumpkins are a winter squash and a member of the Cucurbitaceae family. This includes cucumbers, melons, and watermelons. And it includes gourds, too.
Pumpkin Pudding Ingredients
Here are the ingredients for Pumpkin Pudding:
1 cup
pumpkin puree
1/2 cup
self-raising flour
1/2 cup
butter, softened
1/2 cup
apricot jam
1/2 cup
dried grapes
1 tsp.
baking powder
1
egg
1/2 tsp.
mixed spice
How to Make Pumpkin Pudding Directions
Butter a 2-pint basin and put to one side.
Mix the softened butter and apricot jam together until well-mixed.
Then beat in the egg.
Add the pumpkin, mixed spice, flour, baking powder, and sultanas, and mix thoroughly.
Pour into the greased basin, cover with a layer of foil, and tie with string.
Place on a trivet in a large saucepan and add hot water to halfway up the basin.
Bring to a boil and simmer for three hours, adding more water if necessary.
Serve with cream.
Note: If you cannot find Sultanas, substitute with raisins.
