Slice pumpkin pulp as thinly as possible, no more than 1/8″ thick. Try using a potato peeler to see if you can make really thin chips. The pumpkin is hard. So, it is not easy to use a potato peeler.
Carefully, drop a few chips at a time into the hot oil.
Fry until crisp.
Remove chips from the oil and place on paper towels to drain.
Salt to taste.
Tip: The Chips are best served warm.
